Time goes too quickly! Some Cake, Burgers, Fries, and Pancakes!


It's been a while since I have had a chance to post anything!  I have been busy with work, Lukas, extra doctor appointments, and my husband had been doing the cooking so I didn't do really any cooking.

My hours at work changed again so I am now getting to cook dinner again.  I missed it so much.  I didn't even get a chance to try new things on the weekend with all the events and sickness going on.

Our house the last month and a half has seen lots of sickness.  I am now done with morning sickness, but Lukas had caught the stomach flu, after that he had constipation problems, during that I took him to the chiropractor for ear infections, and during that there was a cold that he and my husband had shared with each other and now gave to me!  So...needless to say we are definitely ready for spring and good health!

I did try a few recipes over the course of the last month or two.  Here are some links.

Lukas loves pancakes, and one morning he asked for some pancakes.  I usually buy the box version and make them this way.  Well I was out of the box version and found this recipe on Allrecipes.com.  They are wonderful pancakes.  I will never make the box version again!
Fluffy and Delicious Pancakes

One Friday we had a burger and fries night.  I made these cute little slider burgers from Big Red Kitchen and I cut some potatoes up and made baked fries from Allrecipes.com.  We all loved them!  Definitely a fun Friday meal!

Lastly my friend Leslie had her birthday back in January and I made this chocolate dream cake!  It was a big hit and she loved it!  We liked it so much I made it again a couple weeks later!

Whole Wheat Blueberry Muffins




Last week before we left for camping I decided to whip up some delicious and wholesome muffins to munch for breakfast while camping. I followed this recipe Whole Wheat Blueberry Muffins from In Good Taste blog and they turned out pretty good too. I did do some extra substations. Here is the recipe I followed.

1 cup all-purpose flour
1 cup whole-wheat flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon grated nutmeg
2 large eggs
1 cup skim milk
2/3 cup packed light brown sugar
1/2 cup applesauce
1 cup of blueberries and 1/2 cup of raspberries

Mix dry ingredients in separate bowl, and then cream eggs, milk, sugar, and applesauce then add dry ingredients to wet ingredients. Fold in berries and grease or line muffin tins with muffin cups and bake at 400 degrees for 15-17 minutes or until you insert a toothpick and it comes out clean. Super easy and good!

Note: I also melted a little butter and put some butter on top of the muffins and sprinkled sugar for some extra flavor!

Chocolate Zuchini Muffins


My little Lukas loves his muffins. In fact he begs for them like they are candy! It's a wonderful thing because you can manipulate a muffin to give some nutritional value too! I made this recipe a few weeks ago and he loves them! I even made half mini muffins and half regular sized muffins. I did give some away, but Lukas and I ate a lot of them!

Here is the recipe I sort of followed. MuFfInS!

My muffins did turn out a little dry, but I didn't put any oil in them. (Maybe next time I will only substitute half the oil.) I substituted 1 cup of applesauce instead of oil, 1 cup of splenda for half the sugar, and 1 1/2 cup whole wheat flour for half the flour.

Besides being a little dry they were still great! My most important little taste tester loved them!

Good Morning Saturday Pancakes!


Almost every Saturday I make pancakes for Lukas! He will actually request them when he wakes up Saturday mornings. His favorite is chocolate chip pancakes and I usually split the batter and throw in whatever fruit I have for my pancakes. These are totally dummy proof pancakes made with Bisquick. Use the recipe from the back of the box.

When I split a regular batch of pancakes I throw in 1/2 cup of chocolate chips and they turn out tall and fluffy! I also sprinkle some chocolate chips on top for him. Lukas loves them and the leftovers freeze beautifully!

The fruit I had on hand this time for my pancakes were strawberries! I love strawberries so I felt a little spoiled. I kept some leftover strawberries to top on the pancakes.
